Easy Carob pudding

Mid afternoon tea time is a thing around my house. However it rarely involves tea and is anything but relaxing. Sometime around 4pm, things tend to go downhill quickly. It’s not quite dinner time, but it’s been 4 hours since lunch, and everyone is getting hungry and grouchy. Although I’m not a huge fan of snacks, I can make the exception for one that is high in fat, low in sugar, and quick to prepare.

This easy carob pudding recipe fits all of those criteria. With just 3 ingredients (4 if you’d like to add whipped cream to the top), an easier snack would be difficult to come by. We choose to use carob in this recipe, but cocoa powder could definitely be used. We prefer to use carob because of the deliciously sweet and deep flavor it has all on its own. If you’d prefer to not use maple syrup, half of a banana or honey would work as well.

Easy Carob Pudding

ingredients:

  • 4 ripe avocados 
  • 1 cup carob powder
  • 1/3 cup maple syrup
  • 1/2 cup heavy whipping cream (optional)

How to cook Easy Carob Pudding

  1. Remove pits and skins from avocado and place flesh in large bowl
  2. Add carob powder and maple syrup 
  3. Blend using immersion blender
  4. Spoon into 8 small dishes
Whipped Cream Topping
  1. Pour heavy whipping cream into jar
  2. Using immersion blender, whip until thick
  3. Leave as is and serve or add 1 tsp sweetener of choice and briefly whip again
