Healthy snacks are a must around here. This is especially true during the summer months when we are on the go and sometimes don't break for lunch. Our usual go-tos aren't that original; string cheese, meat sticks, fruit, cut vegetables. Occasionally the creative bug hits, and I'm able to make a snack that is delicious, healthy, and a little bit unique.

A little over month ago, I became an ambassador for The Real Pantry. One of our favorite seasoning blends is Real Food Ranch. Honestly, it tastes good in everything. We love to mix about 1/3 of a package into6oz of organic sour cream for a tasty ranch dip that is free from weird ingredients. If you have kids (or adults) that are hesitant to eat their vegetables, making ranch dip is a sure fire way to convince them otherwise. My daughter has also found that baked chicken and sweet potato fries also taste exceptional dipped in Real Food Ranch.

A few days ago, after going through my pantry and locating some dried garbanzo beans, I decided to take my chances with a recipe I'd been thinking about. This would also work with canned beans, although I prefer to soak mine from the dry state first to reduce phytic acid. Mixed with a little bit of coconut oil, ranch seasoning, and Himalayan sea salt (also found in the 10 pack from The Real Pantry), and baked for 30 min, these were an instant hit (which is why I didn't get an "after"shot). I did get a sweet photo of my kids finishing off the entire plate of crispy ranch garbanzos while I was busy cleaning up the kitchen.


*1 Can Garbanzo Beans or 1 cup dried beans, soaked overnight and cooked until soft

*Coconut oil

*Ranch seasoning mix and Himalayan Sea Salt

1. Preheat oven to 450°F

2. Rinse beans and pat dry

3. Dump beans into bowl and coat with 1TB coconut oil, 1.5 TB Ranch seasoning, and 2 tsp salt

4. Line baking sheet with parchment paper and pour coated beans onto it

5. Bake at 400°F for 35 minutes until slightly toasted and crispy.
