Most mornings, my husband fixes us all a nourishing breakfast of eggs and bacon, but sometimes I am just not in the mood. However, skipping breakfast is simply not my style. After an early morning workout, but before I'm ready to delve into a day of homeschooling the kiddos, I need something warm and nutritious in my belly. This delicious recipe I created is based off of the ever-so-popular Bulletproof Coffee, but with a few added tweaks. If you don't drink coffee, try caffeine-free Dandyblend instead. Both versions are delicious, nutritious, fast, and fun to drink!
You may remember that I switched out my regular coffee for mushroom coffee last spring (more about that here). To the typical Bulletproof recipe, I also added; a sulfur rich egg yolk; skin, bone, and nail replenishing collagen, and inflammation decreasing cinnamon. Perfect for a post workout drink or an on-the-go breakfast.
1 Pastured Egg Yolk
1 TB Collagen
1 TB Coconut Oil
1 TB Pastured Butter
1. Bring 8oz water to a boil and pour into a medium metal or glass pot or large cup
2. Add coffee packet or Dandyblend
3. Add other ingredients
4. Blend using immersion blender
5. Pour into your favorite mug and enjoy!
